Kefir culture
Kefir originally comes from the Caucasus region and is a probiotic and refreshing beverage. Almost any type of milk can be used for production (pasteurized or raw milk, whole or skim milk). The milk is inoculated with the kefir culture, and within 24 hours at room temperature the fermentation is complete and the drink is ready to consume. Part of the culture can then be reused with fresh milk, allowing a kefir culture to be propagated almost indefinitely with proper care.

At 5 °C approx. 5 days
At 10 °C approx. 3 days
The fat and protein content roughly corresponds to that of the milk used.
